Spinach, especially in the spring and early summer, is a remarkable vegetable, with a clear and subtle taste. I rarely serve it with anything else. But a pound or two of fresh spinach leaves can take up an entire sink and briefly involve several pots. It must be well-rinsed; the slightest grit left behind is a false note. You will need a large mixing bowl in which to rinse the spinach. It may, for a moment, seem a considerable fuss to make this dish. And the servings, even from two pounds of spinach, are very modest. But that is the brilliance of it, and what makes it worth the effort. It is a flurry of labor and bowls for a lovely moment of tasting.
